Who like COOKIES!

I love to bake!  And I love to bake cookies!  Luke suggested that I post one of my recipes on here since it is perfect for Christmas or Easter or any other time that you might have extra chocolate laying around.  

I use chocolate anything for this recipe.  This time I used a giant chocolate Santa that my friend gave me to make these cookies.  I started with Easter bunnies and then moved on...  I also sometimes use Dove Chocolates that have been laying around for a while.

1/2 lb of coarsely chopped chocolate for melting
1/2 lb of chocolate chopped into chunks
1/2 cup cocoa powder
1 cup flour
1/2 teaspoon of baking soda
1.2 teaspoon of coarse salt
1 stick butter
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract

1.  Preheat oven to 325.  Whisk together flour, cocoa powder, baking soda, and salt.

2. Melt 1/2 lb of chocolate with the butter in a double boiler (or make one with a heat resistant bowl and simmering water).  Let cool slightly.

3.  Put chocolate mixture, sugar, eggs, and vanilla in a bowl and mix; gradually fold in flour and chocolate chunks.

4.  Bake for about 15 minutes.  Cookies will crack.


If this sounds like a lot of chocolate, it is!  It's A LOT OF CHOCOLATE!  But every time I make these cookies I get many "these are the best cookies I have ever had".  I modified this from Martha Stewart's "Cookies".  That book is amazing for any cookie lovers out there!  I have made many a cookie from this book and I have yet to be disappointed.

yum they sound delicious to me - and I would rather just eat the cookies you make than try and make them myself
